Latest ARS Food & Nutrition Research Briefs Posted

The Agricultural Research Service has posted the May 2002 issue of the Food & Nutrition Research Briefs on its web site at:

The Research Briefs presents updates about ARS research in human nutrition, food freshness and safety, and new foods.

Visitors to the web site can subscribe to receive future issues of the Briefs by e-mail.

Among the items in the May 2002 issue:

  • Breads that taste great, yet are made with less fat than usual, may result from ARS and university experiments with waxy durum wheats.
  • Producers of popular peppers can learn more about their crop from ARS studies.
  • A new investigation may determine whether women can take iron supplements during pregnancy without interfering with their bodies' uptake and use of another essential mineral, zinc.
  • Attractive red beans with better yields and improved disease resistance are being developed from breeding lines produced by ARS researchers and their university colleagues.

ARS is the chief scientific agency of the U.S. Department of Agriculture.
